Coriander and Manchego Pesto

What You Need


For the Prawns:

25g  Fresh Basil 

50g  Coriander 

50g Pine Nuts

75g  Finely Grated Gruyère Cheese

1 Lime Zest and Juice 

2 tbsp Olive Oil 




1. Add all the ingredients to a blender as well as 1/2 cup of water 

2. Season with salt and pepper 

3. Blitz until smooth, if its too thick add more water or oil – depending on its consistency 

4. Enjoy! 


Homemade pesto is always better than shop bought and it is so simple to make. 

Our favourite part about pesto is adding your favourite herbs, shop bought is usually basil but coriander and parsley work great. 

We used this as a base for pasta, with tuna and pistachios.
