Pistachio and Herb Couscous

What You Need


1 Pack Instant Couscous 

1/2 Bunch Chives 

1/2 Bunch Flat Leaf Parsley 

1/2 Bunch Coriander

1/2 Bunch Basil

1 Lemon

Handful Pistachios 

2 Tbsp Olive Oil

  1. Prepare the couscous as stated on the back of the pack. For Clearspring Instant Couscous, you add 65g of couscous to a large bowl and add 150ml of boiling water. Cover with a tea towel for 5 minutes
  2. Meanwhile add the herbs and the zest and juice of the lemon to a food processor. Blitz until its comes close to a paste 
  3. Once the couscous is ready, fluff it up with a fork and add the blitzed herbs, olive oil, pistachios and season with salt and pepper. Mix well together 
  4. Enjoy!


This is a great dish to make in bulk and eat throughout the week. It is very versatile with different cuisines. We paired it with grilled chicken and salmon. It also works great with a tagine. 

You may want to add more olive oil if you store it for a few days, as it can become dry. 

You can also add dried fruits to add extra flavour: 

  • Raisins 
  • Apricots 
  • Prunes 
  • Dates
