Rainbow Tray Bake

What You Need


1 Pack cherry tomatoes 

2 Lemons 

2 Carrots 

1 Pack Tender Stem Broccoli 

1 Pack Asparagus 

1 Large Spring of Broccoli 

2 Tbsp Kalamata Olives

3-4 Salmon Fillets 

 3 Tsp Crispy Chili Oil 

1. Pre heat the oven to 180c 

2. Chop the carrots 

3. Get a large baking tray and add the tomatoes, broccoli, tender stem broccoli, asparagus and carrots – spreading out evenly 

3. Chop the lemons in half and add on top and season well with salt and pepper 

4. Put in the oven for 25minutes 

5. Add a teaspoon of crispy chili oil to each peice of salmon 

6. Remove the tray and place the salmon on top 

7. Add back to the oven for a further 10-15 minutes, depending on the thickness of the salmon 

8. Remove from the oven and squeeze the cooked lemon on top 

9. Enjoy! 


This is a greta way to get in your 5 a day with minimal effort. Perfect to bang in the oven after a long day. 

It can easily be made vegetarian by swapping the salmon to tofu or feta 

We accompanied it with our baked feta dip but would work great with grains or rice.
