Rocky Road Bites

What You Need

Instructions

100g Unsalted Butter

200g Milk Chocolate 

2 Tbsp Golden Syrup

1 Tbsp Honey

10g Coconut Flakes

2g Strawberries Freeze Dried

15g White Chocolate 

1. Line a cupcake tin with a light layer of butter

2. Put the butter, chocolate, golden syrup, and honey in a saucepan and melt on a low heat 

3. Once melted fold in the rest of the ingredients, leaving aside 10g of white chocolate 

4. In another small saucepan, melt the leftover white chocolate on a low heat  

5. Spoon the mixture into the cupcake holes 

6. Drizzle over the melted white chocolate 

7. Put in the fridge for at least 2 hours 

8. Enjoy! 

Notes

The great thing about rocky road is you can make it personal to you. Once you have the base sorted: step two, you can add whatever you like. The recipe above is some suggestions. 

Some inspiration: 

– Mini Marshmallows (make sure they are gf) 

– Nuts: almonds, walnuts, brazil 

– Cranberries 

– Rasins 

– Apricots

This can also be made in a baking tin, if you prefer square bites. We just love the idea of a mini bite.

It can easily be made vegan and diary free by switching out the chocolate to a diary free alternative.
