Spicy Pork and Peanut Noodles

What You Need

Instructions

For the sauce:

1tbsp Sesame Oil 

1tsp Peanut Butter

2tsp Fish Sauce 

2tsp Rice Mirin 

1tsp Worcestershire Sauce 

1/2tsp MSG (optional)

 

500g Pork Mince 

1 Pack Protein Noodles

1 Lime

3 Cloves Garlic 

1 Thumb Sized Piece of Ginger

2 Red Chillis 

3 Pak Choi 

6 Leafs Cavelo Nero 

Handful Peanuts

 

  1. Add all the Ingredients for the sauce to a bowl and mix together well 
  2. Slice the garlic finely, and chop up the ginger and chillis into small pieces 
  3. Chop the rest of the vegetables into medium pieces and chop the lime into quarters 
  4. Add some sesame oil to a deep pan, on a medium heat, and add the garlic, ginger and chilli to it. Cook until it becomes fragrant 
  5. Rinse off the noodles in a colander and leave to the side 
  6. Add the rest of the vegetables and lime and mix well, cook for 2 minutes and then add the pork mince and break into small pieces 
  7. Once the pork has turned brown add the sauce and noodles 
  8. Cook for a further 3 minutes, making sure everything is coated well 
  9. Plate up and squeeze over the cooked lime 
  10. Enjoy! 

Notes

This is the perfect combination between creamy and spicy, and the mince absorbs the flavours wonderfully. 

Barenaked’s protein noodles are only 26 calories so work well for a light lunch. The protein noodles can easily be swapped to rice noodles or gluten free udon, to make it more substantial. 

This can easily be made vegan by swapping the mince to tofu and missing out the fish sauce
