What You Need

280g Firm Tofu
150g Shiitake Mushrooms
90g Baby Pak Choi (normal can be used)
1 Pack Protein Noodles
For the Sauce:
1tbsp Tamari Sauce
1tbsp Sesame Oil
1tsp Chili Oil
1tsp Worcestershire sauce
1/2tsp MSG (optional)
1. Wrap a clean tea towel around the tofu and place it on a plate with a lip. Place a heavy object on top and leave for at least 15 minutes.
2. Chop the tofu into squares
3. Add all the ingredients for the sauce together in a Tupperware box and then add the tofu. Cover with the lid and shake gently to insure it is coated all over. Leave for 30 minutes, or overnight in the fridge
3. Chop up the pak choi and mushrooms into small pieces
4. Open the protein noodles packet and wash the noodles in a sieve. Place to one side
5. Add some sesame oil to a pan and add the mushrooms and pak choi. Cook for 2 minutes and then add the noodles and 1/2 tbsp of tamari sauce, cook for another 3 minutes with the lid on
6. Add the tofu and any remaining sauce and stir in
7. Serve with a drizzle of chilli oil
8. Enjoy!

This vegan dish is packed full of flavour and is perfect for meal prep.
Barenaked’s protein noodles are only 26 calories so work well for a light lunch
We used Lao Gan Ma Crispy Chilli in Oil which is our tried and tested favourite chilli oil
We made them vegan but they work great with:
